Bread Bowl and Dippers
Step 1
Preheat the oven to 400°F. Line a baking sheet with parchment.Cut the top off of the sourdough loaf, and hollow out a hole large enough for the wheel of cheese to fit in. The cheese should fit snugly and be even with the top of the bread. Set the cheese aside.
Step 2
Take the hollowed-out insides and the top of the bread loaf, and cut them into bite sized pieces. Drizzle the insides of the hollowed out bread and the pieces of bread with olive oil and sprinkle everything with kosher salt. Place the bread pieces and the bread bowl on the lined baking sheet, and bake until beginning to turn golden brown, about 15 minutes. Once done, remove from the oven and set aside.
Bacon and Onion Topping
Step 1
While the bread is in the oven, work on the bacon and onion topping. Preheat a large skillet over medium heat. To the hot skillet, add bacon pieces and cook them most of the way through, stirring often to prevent sticking. We don’t want to cook the bacon all the way through, as we will add it back to the skillet later on to finish cooking. Once 75% cooked, drain all but 2 tablespoons of bacon fat and set the bacon aside, this will take about 10-15 minutes.
Step 2
To the same skillet, add in butter, followed by garlic and red pepper flakes. Cook until the garlic is fragrant, stirring often.
Step 3
Then add in the onions and give them a stir to prevent the garlic from sticking and burning. Allow them to sit for about 5 minutes and don’t touch them or season them to help them begin to caramelize.
Step 4
After 5 minutes, give the onions a stir.. Season them with salt, fresh thyme, black pepper, and add in the white wine, Worcestershire sauce, white balsamic vinegar, and the Domino® Dark Brown Sugar. Reduce the heat to medium-low and cook and caramelize for about 30-35 minutes, stirring often to prevent burning.
Step 5
After about 35 minutes of cooking, add back the bacon. Continue cooking the bacon with the onions until fully cooked through, stirring often to prevent burning for about 10 minutes. Adjust the seasonings to taste. Remove from the heat and set aside.
Camembert Cheese
Step 1
After the bread comes out of the oven, set aside the dippers, and reduce the oven heat to 350°F. Slice a thin layer of the rind off the top of the cheese to expose the inside. Score the top of the cheese to make a crosshatch pattern.
Step 2
Place the scored cheese wheel inside of the hollowed out bread bowl, and then drizzle the cheese with olive oil, and white wine. Sprinkle with fresh thyme, red pepper flakes, kosher salt, and black pepper. Place in the oven, and bake at 350°F for 25-30 minutes, until the cheese is melty and gooey.
Step 3
When the bread and cheese come out of oven, top it immediately with the bacon and onion topping. Garnish with fresh thyme and red pepper flakes. Serve it with the crispy bread pieces and enjoy while hot!
