For the butterfly pea tea simple syrup
1 cup Domino® Granulated Sugar, Easy Baking Tub
- 1 cup Water
- 2 tablespoons Butterfly pea tea flowers
For the French 75 cocktail
Ice
- 1 ½ ounce Gin of choice
- ¾ ounce Lemon juice, freshly squeezed
- 1 ounce Butterfly pea tea simple syrup
- 3-4 ounces Champagne, cold
- Rosemary sprigs as garnish

Step 1
In a small saucepan, over medium heat, combine water and sugar. Add butterfly pea tea flowers. Bring the mixture to a boil. Reduce the heat and simmer for 2-3 minutes, stirring occasionally. Stain the mixture and allow cooling to room temperature.
Step 2
For the drink. Add butterfly pea tea simple syrup to the bottom of a champagne glass. Add gin and lemon juice to a shaker filled with ice, shake until chilled and strain into the glass (you will see the change in color), top with champagne. Garnish with rosemary sprigs.
Additional Tips
Top with additional simple syrup after adding the champagne for a colorful look to your drink.
Use the leftover syrup to sweeten lemonade or other cocktails like Tom Collins or Margaritas.
