Fig Cake

Fig cake is a delightful Turkish dessert that combines a soft, dried fig cake base with a layer of creamy pudding. The cake has simple ingredients like flour, eggs, Domino® Granulated Sugar, and Domino® Light Brown Sugar creating a tender and flavorful foundation. The creamy pudding layer is made with milk, sugar, and a thickening agent like cornstarch and flour, resulting in a smooth and velvety texture.

Ingredients

  • 4 Large Eggs

  • ½ cup Domino® Granulated Easy baking Sugar Tub
  • ½ cup Domino® Light Brown Sugar
  • 1 1/2 cup All-purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp  Cinnamon powder
  • 8 Sun Dried Figs
  • 1 cup Chopped Walnut

Soaking

  • 1 cup Brewed coffee

  • 2 tbsp Domino® Granulated Sugar 

Frosting

  • 4 cup Whole Milk

  • ½ cup Domino® Granulated Sugar 
  • 1/3 cup All-purpose Flour
  • 1/3 Corn Starch
  • 1 cup Heavy Whipping Cream

Prep Time: 30 minutes / Bake Time: 25 minutes / Yields: 15 servings

Step 1

Preheat your oven to 350°F (175°C). Butter a 9x13 inch baking pan, and set aside.

Step 2

In a small bowl pour hot water over dried figs, let them soak for 10 minutes. With a paper towel pat dry them and and cut them into cubes.

Step 3

In a large mixing bowl, beat the eggs, granulated sugar, and light brown sugar until light and fluffy. Gradually add the flour, cinnamon, and baking powder to the wet ingredients, mixing until combined. Fold in the chopped walnuts and diced dried figs. Pour the batter into the prepared baking pan.

Step 4

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Step 5

While the cake is cooling, prepare the soaking mixture by combining the brewed coffee in a shallow dish. Once the cake has cooled, use a fork or skewer to poke holes all over the surface of the cake. Slowly pour the brewed coffee over the cake, allowing it to soak in.

Step 6

In a saucepan, whisk together the whole milk, granulated sugar, all-purpose flour, and cornstarch over medium heat. Cook the mixture, stirring constantly, until it thickens and comes to a boil. Remove the mixture from the heat and let it cool slightly.

Step 7

Add Heavy Whipping Cream and mix until light and fluffy with an electric hand mixer.

Step 8

Spread the frosting evenly over the top of the soaked cake.

Step 9

Chill the cake in the refrigerator for at least 2 hours before serving. Once chilled, decorate as desired and slice your delicious cake!
