Prep Time: 25 minutes / Bake Time: 60 minutes / Yields: 8-10 servings

Step 1

Preheat oven to 350°F. Grease and line the bottom of one 9-inch springform pan with parchment paper. Set aside.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large bowl, using an electric mixer, beat the eggs, sugar, and orange zest at high speed until light and fluffy. About 1-2 minutes. Reduce the speed of the mixer and slowly add the olive oil. Scrape the sides of the bowl as needed.

Step 4

Mix the milk and orange juice. With the mixer at low speed, slowly add to the mixture. Add the flour mixture and mix until just combined. Pour into the prepared pan.

Step 5

Bake for 60 minutes or until a toothpick inserted in the center of the cake comes out clean. Remove from the oven and allow the cake to cool on a cooling rack for 15 minutes. Carefully remove from the pan. Invert the cake onto a serving platter and remove the parchment paper.

Step 6

Prepare the glaze by whisking together all the ingredients until smooth. Poor over cake and decorate with orange slices. Serve.
