Sweet Potato Pone

Sweet potato pone is a sweet custard-like dish with Caribbean influence consisting of grated white potatoes flavored with warm spices, molasses, vanilla extract, and Domino Light Brown Sugar.

Ingredients
  • 1 cup all-purpose flour

  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground nutmeg
  • 1 teaspoon Ground allspice
  • ½ teaspoon salt
  • 2 cups Coconut milk
  • ½ cup Evaporated milk
  • ½ cup  Unsalted butter, melted and cooled
  • 1 ½ cups Domino® Light Brown Sugar
  • ¼ cup molasses
  • 1 tablespoon Pure vanilla extract
  • 3 pounds White sweet potatoes, wash, peeled, and grated

Brown Butter Coconut Sauce

  • 6 tablespoons Unsalted butter

  • 1 cup Coconut milk
  • 1/3 cup Domino® Light brown sugar
  • ¼ teaspoon Salt

Prep Time: 15 minutes / Cook Time: 1 hour 30 minutes / Yields: 12 servings

Step 1

Preheat your oven to 350°F. Spray a 9-inch springform pan with nonstick cooking spray and set aside.

Step 2

In a medium mixing bowl, whisk together the flour, cinnamon, ginger, nutmeg, salt, and allspice. Set aside.

Step 3

In a separate large mixing bowl, whisk together the coconut milk, evaporated milk, and melted butter until combined. Whisk in the Domino brown sugar, molasses, and vanilla extract until smooth.

Step 4

Add the grated sweet potato to the milk mixture and mix with a silicone spatula until incorporated. Add the flour mixture and mix until no more dry flour is visible.

Step 5

Pour the batter into the prepared pan and bake for 1 hour 30 minutes – 1 hour 45 minutes until set. Cool the pone completely.

Step 6

In a medium nonstick skillet, melt the butter over medium-low heat. Continue to cook for 7-10 minutes, stirring constantly, until browned. The butter will foam, then become a clear brown-tinted liquid with a nutty aroma and browned bits on the bottom of the pan. Transfer the brown butter to a small bowl to cool completely.

Step 7

Add the coconut milk, brown sugar, and cooled browned butter to a medium saucepan and heat over medium-low heat. Cook, while stirring, for 3-4 minutes until the butter melts and the sugar dissolves. 

Step 8

Serve slices of sweet potato pone with brown butter coconut sauce poured over top.
